Sindhi Koki (سندھی کوکی)

Ingredients
- 2 cups whole wheat flour
- 1 onion, finely chopped
- 2-3 green chilies, finely chopped
- 1/2 cup fresh coriander, chopped
- 1/2 tsp cumin seeds
- 1/2 tsp red chili powder
- 1/2 tsp turmeric powder
- Salt to taste
- Water as needed
- Oil for cooking
Instructions
- In a large mixing bowl, combine the whole wheat flour, chopped onion, green chilies, fresh coriander, cumin seeds, red chili powder, turmeric powder, and salt.
- Add water gradually and knead the mixture into a firm dough.
- Divide the dough into equal-sized balls and flatten them into thick discs using your palms.
- Heat a griddle or non-stick pan over medium heat and place the flattened dough disc on it.
- Cook the koki on both sides, adding a little oil, until golden brown and crispy.
- Repeat the process with the remaining dough discs.
- Serve the hot koki with yogurt, chutney, or pickles.
