Sindhi Koki (koki Delight)
Sindhi Koki, also known as Koki Delight, is a popular flatbread from the Sindhi cuisine. It is a delicious and flavorful dish that can be enjoyed for breakfast or as a snack.
Ingredients
- 2 cups whole wheat flour
- 1 onion, finely chopped
- 2 green chilies, finely chopped
- 1/4 cup fresh coriander, chopped
- 1/2 tsp cumin seeds
- 1/2 tsp ajwain (carom seeds)
- 1/2 tsp red chili powder
- Salt to taste
- Water as needed
- Oil for cooking
Instructions
- In a large mixing bowl, combine the whole wheat flour, chopped onion, green chilies, fresh coriander, cumin seeds, ajwain, red chili powder, and salt.
- Add water gradually and knead the mixture into a firm dough.
- Divide the dough into 4 equal portions and shape each portion into a ball.
- Take one dough ball and flatten it with your hands to form a disc, about 6 inches in diameter.
- Heat a tawa or griddle over medium heat and place the flattened dough on it.
- Cook the koki on both sides, applying oil as needed, until golden brown and crispy.
- Repeat the process with the remaining dough portions.
- Serve the Sindhi Koki hot with yogurt, pickle, or chutney.
