Sindhi Koki Panini
Sindhi Koki Panini is a fusion dish that combines the traditional Sindhi flatbread, Koki, with the Italian panini. This unique recipe brings together the flavors of Sindhi cuisine with a modern twist, perfect for a quick and delicious meal.
Ingredients
- 2 cups whole wheat flour
- 1 onion, finely chopped
- 2 green chilies, finely chopped
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon red chili powder
- Salt to taste
- Water as needed
- Butter for grilling
Instructions
- In a large mixing bowl, combine the whole wheat flour, chopped onion, green chilies, cumin seeds, red chili powder, and salt.
- Add water gradually and knead the mixture into a firm dough.
- Divide the dough into 2 equal portions and roll each portion into a flatbread (koki).
- Heat a pan over medium heat and cook each koki for 2-3 minutes on each side until golden brown, using a little butter.
- Once the koki is cooked, remove from the pan and let it cool slightly.
- Assemble the Sindhi Koki Panini by placing the koki between a panini press or grilling it on a stovetop grill until crispy and golden brown.
- Serve hot with your favorite chutney or dipping sauce.
