Sindhi Koki Pizza

Ingredients

  • 2 cups whole wheat flour
  • 1 onion, finely chopped
  • 1 tomato, finely chopped
  • 1/2 cup bell peppers, diced
  • 1/2 cup mushrooms, sliced
  • 1/2 cup olives, sliced
  • 1 cup pizza sauce
  • 1 cup vegan cheese, shredded
  • 1 tsp red chili powder
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1/2 tsp garam masala
  • Salt to taste
  • 2 tbsp oil
  • Water as needed

Instructions

  1. In a large mixing bowl, combine the whole wheat flour, chopped onion, tomato, bell peppers, mushrooms, olives, red chili powder, cumin seeds, turmeric powder, garam masala, salt, and oil.
  2. Add water gradually and knead the mixture into a firm dough. Divide the dough into 4 equal portions and roll each portion into a flatbread (koki) shape.
  3. Heat a non-stick pan over medium heat and place the koki on it. Cook each side for 2-3 minutes until golden brown, then set aside.
  4. Spread pizza sauce evenly on each koki, then sprinkle vegan cheese on top.
  5. Place the koki pizzas back in the pan, cover, and cook for 5-7 minutes until the cheese melts and the koki is crispy.
  6. Remove from the pan, slice, and serve hot.
