Sindhi Koki Pizza
Sindhi Koki Pizza is a fusion dish that combines the traditional Sindhi flatbread, Koki, with the flavors of a pizza. It's a delicious and unique dish that is perfect for a fun and flavorful meal.
Ingredients
- 2 cups whole wheat flour
- 1 onion, finely chopped
- 1 tomato, finely chopped
- 1/2 cup bell peppers, diced
- 1/2 cup mushrooms, sliced
- 1/2 cup olives, sliced
- 1 cup pizza sauce
- 1 cup vegan cheese, shredded
- 1 tsp red chili powder
- 1 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1/2 tsp garam masala
- Salt to taste
- 2 tbsp oil
- Water as needed
Instructions
- In a large mixing bowl, combine the whole wheat flour, chopped onion, tomato, bell peppers, mushrooms, olives, red chili powder, cumin seeds, turmeric powder, garam masala, salt, and oil.
- Add water gradually and knead the mixture into a firm dough. Divide the dough into 4 equal portions and roll each portion into a flatbread (koki) shape.
- Heat a non-stick pan over medium heat and place the koki on it. Cook each side for 2-3 minutes until golden brown, then set aside.
- Spread pizza sauce evenly on each koki, then sprinkle vegan cheese on top.
- Place the koki pizzas back in the pan, cover, and cook for 5-7 minutes until the cheese melts and the koki is crispy.
- Remove from the pan, slice, and serve hot.
