Sindhi Koki Sandwich

Ingredients

  • 2 cups whole wheat flour
  • 1 onion, finely chopped
  • 2 green chilies, finely chopped
  • 1/2 tsp cumin seeds
  • 1/2 tsp red chili powder
  • Salt to taste
  • 2 tbsp oil
  • Butter for spreading
  • 1/2 cup grated cheese

Instructions

  1. Mix whole wheat flour, onion, green chilies, cumin seeds, red chili powder, salt, and oil in a bowl to make a firm dough.
  2. Divide the dough into 4 equal portions and roll out each portion into a thick roti.
  3. Cook the rotis on a hot griddle until golden brown on both sides.
  4. Spread butter on one side of each roti and sprinkle grated cheese on top.
  5. Place another roti on top to make a sandwich.
  6. Grill the sandwiches until the cheese melts and the rotis turn crispy.
  7. Serve hot with chutney or ketchup.
