Sindhi Saag (سندھی ساگ)

Ingredients

  • 500g spinach, washed and chopped
  • 250g mustard greens, washed and chopped
  • 1 onion, finely chopped
  • 3-4 green chilies, chopped
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 1 tomato, chopped
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1/2 tsp cumin seeds
  • Salt to taste
  • 2 tbsp oil
  • Water as needed

Instructions

  1. Heat oil in a pot and add cumin seeds. Let them splutter.
  2. Add chopped onion and sauté until golden brown.
  3. Add ginger and garlic paste, green chilies, and tomatoes. Cook until the tomatoes are soft.
  4. Add all the dry spices and cook for a few minutes.
  5. Add the chopped spinach and mustard greens. Mix well.
  6. Add water as needed and let the saag cook on low heat until the greens are tender.
  7. Once the saag is cooked, adjust the seasoning and serve hot.
