Sindhi Sai Bhaji Paratha
Sindhi Sai Bhaji Paratha is a traditional dish from the Sindhi cuisine that combines the goodness of mixed greens with the comfort of stuffed parathas. It's a wholesome and flavorful meal that is perfect for breakfast, lunch, or dinner.
Ingredients
- 2 cups whole wheat flour
- 1 cup mixed greens (spinach, fenugreek leaves, dill, and mustard greens), finely chopped
- 1 onion, finely chopped
- 2-3 green chilies, finely chopped
- 1 tsp ginger-garlic paste
- 1 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- Salt to taste
- 2 tbsp oil
- Water as needed
Instructions
- In a mixing bowl, combine the whole wheat flour, a pinch of salt, and water to make a soft dough. Cover and let it rest for 15 minutes.
- In a pan, heat 1 tbsp oil and add cumin seeds. Once they splutter, add the chopped onions and green chilies. Saute until the onions are translucent.
- Add the ginger-garlic paste and saute for a minute. Then, add the mixed greens, turmeric powder, red chili powder, and salt. Cook until the greens are wilted and the mixture is dry. Let it cool.
- Divide the dough into equal portions and roll each portion into a small disc. Place a spoonful of the prepared filling in the center and seal the edges to form a stuffed ball.
- Roll out each stuffed ball into a paratha using some dry flour for dusting.
- Cook the parathas on a hot griddle with a little oil until golden brown spots appear on both sides.
- Serve hot with yogurt, pickle, or chutney.
