Sindhi Sai Bhaji Paratha

Ingredients

  • 2 cups whole wheat flour
  • 1 cup mixed greens (spinach, fenugreek leaves, dill, and mustard greens), finely chopped
  • 1 onion, finely chopped
  • 2-3 green chilies, finely chopped
  • 1 tsp ginger-garlic paste
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • Salt to taste
  • 2 tbsp oil
  • Water as needed

Instructions

  1. In a mixing bowl, combine the whole wheat flour, a pinch of salt, and water to make a soft dough. Cover and let it rest for 15 minutes.
  2. In a pan, heat 1 tbsp oil and add cumin seeds. Once they splutter, add the chopped onions and green chilies. Saute until the onions are translucent.
  3. Add the ginger-garlic paste and saute for a minute. Then, add the mixed greens, turmeric powder, red chili powder, and salt. Cook until the greens are wilted and the mixture is dry. Let it cool.
  4. Divide the dough into equal portions and roll each portion into a small disc. Place a spoonful of the prepared filling in the center and seal the edges to form a stuffed ball.
  5. Roll out each stuffed ball into a paratha using some dry flour for dusting.
  6. Cook the parathas on a hot griddle with a little oil until golden brown spots appear on both sides.
  7. Serve hot with yogurt, pickle, or chutney.
