Sindhi Sai Bhaji Pizza Rolls

Ingredients

  • 2 cups spinach, chopped
  • 1 cup fenugreek leaves (methi), chopped
  • 1/2 cup dill leaves (suva), chopped
  • 1/2 cup coriander leaves, chopped
  • 1/2 cup mint leaves, chopped
  • 1/2 cup gram flour (besan)
  • 1/2 cup onions, finely chopped
  • 1/4 cup tomatoes, finely chopped
  • 1 tsp ginger, grated
  • 1 tsp garlic, minced
  • 1 tsp green chilies, finely chopped
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala
  • Salt to taste
  • 12 small pizza dough balls
  • 1/2 cup vegan cheese, shredded
  • 1/4 cup olive oil

Instructions

  1. In a large bowl, mix together the chopped spinach, fenugreek leaves, dill leaves, coriander leaves, mint leaves, gram flour, onions, tomatoes, ginger, garlic, green chilies, cumin seeds, turmeric powder, red chili powder, garam masala, and salt.
  2. Divide the mixture into 12 equal portions.
  3. Roll out each pizza dough ball into a small circle and place a portion of the spinach mixture in the center. Top with a sprinkle of vegan cheese.
  4. Bring the edges of the dough together to form a ball, making sure to seal the filling inside.
  5. Heat olive oil in a pan over medium heat and place the stuffed dough balls in the pan. Cook until golden brown on all sides.
  6. Remove from the pan and let them cool slightly before serving.
