Sindhi Sai Bhaji Rice Bowl

Ingredients

  • 2 cups mixed greens (spinach, fenugreek leaves, dill, and mustard greens)
  • 1 cup chopped onions
  • 1 cup chopped tomatoes
  • 1/2 cup chopped cilantro
  • 1/4 cup chopped mint leaves
  • 1/4 cup chopped green chilies
  • 1/4 cup oil
  • 1 tsp cumin seeds
  • 1 tsp ginger-garlic paste
  • 1 tsp red chili powder
  • 1/2 tsp turmeric powder
  • Salt to taste
  • 4 cups cooked rice

Instructions

  1. Wash the mixed greens thoroughly and chop them finely.
  2. Heat oil in a pan and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
  3. Add ginger-garlic paste, green chilies, and tomatoes. Cook until the tomatoes are soft.
  4. Add the chopped greens, cilantro, mint leaves, red chili powder, turmeric powder, and salt. Mix well and cook for 10-15 minutes until the greens are tender.
  5. Divide the cooked rice into serving bowls and top with the prepared Sai Bhaji.
  6. Serve hot and enjoy!
