Sindhi Sai Bhaji Rice Bowl

Ingredients
- 2 cups mixed greens (spinach, fenugreek leaves, dill, and mustard greens)
- 1 cup chopped onions
- 1 cup chopped tomatoes
- 1/2 cup chopped cilantro
- 1/4 cup chopped mint leaves
- 1/4 cup chopped green chilies
- 1/4 cup oil
- 1 tsp cumin seeds
- 1 tsp ginger-garlic paste
- 1 tsp red chili powder
- 1/2 tsp turmeric powder
- Salt to taste
- 4 cups cooked rice
Instructions
- Wash the mixed greens thoroughly and chop them finely.
- Heat oil in a pan and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
- Add ginger-garlic paste, green chilies, and tomatoes. Cook until the tomatoes are soft.
- Add the chopped greens, cilantro, mint leaves, red chili powder, turmeric powder, and salt. Mix well and cook for 10-15 minutes until the greens are tender.
- Divide the cooked rice into serving bowls and top with the prepared Sai Bhaji.
- Serve hot and enjoy!
