Ingredients
- 4 large bell peppers
- 1 cup spinach, chopped
- 1/2 cup chana dal (split chickpeas), soaked
- 1/2 cup mixed vegetables (carrots, peas, corn)
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 2 green chilies, finely chopped
- 1/2 teaspoon turmeric powder
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- Salt to taste
- 2 tablespoons oil
- Fresh coriander leaves for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large bowl, mix together spinach, soaked chana dal, mixed vegetables, onion, tomatoes, green chilies, turmeric powder, cumin seeds, coriander powder, garam masala, and salt.
- Stuff the bell peppers with the sai bhaji mixture.
- Place the stuffed bell peppers in a baking dish, drizzle with oil, and cover with foil.
- Bake for 30 minutes, then remove the foil and bake for an additional 10 minutes until the bell peppers are tender.
- Garnish with fresh coriander leaves and serve hot.
