Sindhi Sai Bhaji Stuffed Bell Peppers

Ingredients

  • 4 large bell peppers
  • 1 cup spinach, chopped
  • 1/2 cup chana dal (split chickpeas), soaked
  • 1/2 cup mixed vegetables (carrots, peas, corn)
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 2 green chilies, finely chopped
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons oil
  • Fresh coriander leaves for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, mix together spinach, soaked chana dal, mixed vegetables, onion, tomatoes, green chilies, turmeric powder, cumin seeds, coriander powder, garam masala, and salt.
  4. Stuff the bell peppers with the sai bhaji mixture.
  5. Place the stuffed bell peppers in a baking dish, drizzle with oil, and cover with foil.
  6. Bake for 30 minutes, then remove the foil and bake for an additional 10 minutes until the bell peppers are tender.
  7. Garnish with fresh coriander leaves and serve hot.
