Sindhi Sai Bhaji Stuffed Mushrooms

Ingredients

  • 12 large mushrooms, stems removed and reserved
  • 1 cup chopped spinach
  • 1/2 cup chopped fenugreek leaves (methi)
  • 1/2 cup chopped dill leaves (suva bhaji)
  • 1/2 cup chopped coriander leaves
  • 1/2 cup chopped mint leaves
  • 1/2 cup chopped onion
  • 2-3 green chilies, finely chopped
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon red chili powder
  • Salt to taste
  • 2 tablespoons oil

Instructions

  1. Heat oil in a pan and add cumin seeds. Once they splutter, add chopped onions and green chilies. Sauté until onions are translucent.
  2. Add the chopped spinach, fenugreek leaves, dill leaves, coriander leaves, and mint leaves. Cook for 5-7 minutes until the greens are wilted.
  3. Add the spice powders - turmeric, coriander, cumin, red chili powder, and salt. Mix well and cook for another 2-3 minutes. Remove from heat and let the mixture cool.
  4. Preheat the oven to 375°F (190°C). Stuff the mushroom caps with the cooled sai bhaji mixture and place them on a baking sheet.
  5. Bake the stuffed mushrooms for 15-20 minutes until the mushrooms are tender and the filling is slightly browned.
