Sindhi Sai Bhaji Stuffed Mushrooms
Sindhi Sai Bhaji Stuffed Mushrooms are a delicious and nutritious appetizer that combines the flavors of Sindhi cuisine with the versatility of stuffed mushrooms. This recipe is a perfect blend of traditional Sindhi flavors and modern presentation.
Ingredients
- 12 large mushrooms, stems removed and reserved
- 1 cup chopped spinach
- 1/2 cup chopped fenugreek leaves (methi)
- 1/2 cup chopped dill leaves (suva bhaji)
- 1/2 cup chopped coriander leaves
- 1/2 cup chopped mint leaves
- 1/2 cup chopped onion
- 2-3 green chilies, finely chopped
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- 1 teaspoon red chili powder
- Salt to taste
- 2 tablespoons oil
Instructions
- Heat oil in a pan and add cumin seeds. Once they splutter, add chopped onions and green chilies. Sauté until onions are translucent.
- Add the chopped spinach, fenugreek leaves, dill leaves, coriander leaves, and mint leaves. Cook for 5-7 minutes until the greens are wilted.
- Add the spice powders - turmeric, coriander, cumin, red chili powder, and salt. Mix well and cook for another 2-3 minutes. Remove from heat and let the mixture cool.
- Preheat the oven to 375°F (190°C). Stuff the mushroom caps with the cooled sai bhaji mixture and place them on a baking sheet.
- Bake the stuffed mushrooms for 15-20 minutes until the mushrooms are tender and the filling is slightly browned.
