Ingredients

  • 2 cups whole wheat flour
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 green chilies, finely chopped
  • 1 tsp cumin seeds
  • 1/2 tsp red chili powder
  • 1/2 tsp turmeric powder
  • Salt to taste
  • 2 tbsp oil
  • Water as needed

Instructions

  1. In a large mixing bowl, combine the whole wheat flour, chopped onion, tomatoes, cilantro, green chilies, cumin seeds, red chili powder, turmeric powder, salt, and oil.
  2. Add water gradually and knead the mixture into a firm dough. Cover and let it rest for 15 minutes.
  3. Divide the dough into 4 equal portions and roll each portion into a flatbread (koki) of about 6 inches in diameter.
  4. Heat a non-stick pan over medium heat and cook each koki for 2-3 minutes on each side, until golden brown spots appear.
  5. Remove from the pan and set aside.
  6. For the bruschetta topping, mix together chopped tomatoes, cilantro, green chilies, and a pinch of salt.
  7. Spread the bruschetta topping on the cooked koki and serve immediately.
