Sindhi Style (koki Bruschetta)
Sindhi Style (Koki Bruschetta) is a delicious and flavorful appetizer that combines the traditional Sindhi flatbread, Koki, with the Italian bruschetta. It's a perfect fusion of flavors and textures that will surely impress your guests.
Ingredients
- 2 cups whole wheat flour
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 1/4 cup fresh cilantro, chopped
- 2 green chilies, finely chopped
- 1 tsp cumin seeds
- 1/2 tsp red chili powder
- 1/2 tsp turmeric powder
- Salt to taste
- 2 tbsp oil
- Water as needed
Instructions
- In a large mixing bowl, combine the whole wheat flour, chopped onion, tomatoes, cilantro, green chilies, cumin seeds, red chili powder, turmeric powder, salt, and oil.
- Add water gradually and knead the mixture into a firm dough. Cover and let it rest for 15 minutes.
- Divide the dough into 4 equal portions and roll each portion into a flatbread (koki) of about 6 inches in diameter.
- Heat a non-stick pan over medium heat and cook each koki for 2-3 minutes on each side, until golden brown spots appear.
- Remove from the pan and set aside.
- For the bruschetta topping, mix together chopped tomatoes, cilantro, green chilies, and a pinch of salt.
- Spread the bruschetta topping on the cooked koki and serve immediately.
