Sindhi Style (koki Waffles)
Sindhi Style (Koki Waffles) is a delicious and innovative twist on the traditional Sindhi flatbread, Koki. This recipe combines the flavors of Koki with the convenience of a waffle maker, resulting in a crispy and flavorful dish that can be enjoyed for breakfast or as a snack.
Ingredients
- 2 cups whole wheat flour
- 1 onion, finely chopped
- 2-3 green chilies, finely chopped
- 1/2 cup fresh coriander, chopped
- 1/2 tsp cumin seeds
- 1/2 tsp ajwain (carom seeds)
- 1/2 tsp red chili powder
- 1/4 tsp turmeric powder
- Salt to taste
- 2-3 tbsp ghee or oil
- Water, as needed
Instructions
- In a large mixing bowl, combine the whole wheat flour, chopped onion, green chilies, fresh coriander, cumin seeds, ajwain, red chili powder, turmeric powder, and salt.
- Heat the ghee in a small pan and pour it over the flour mixture. Mix well.
- Add water gradually and knead the mixture into a firm dough.
- Divide the dough into 4 equal portions and shape each portion into a ball.
- Preheat the waffle maker and lightly grease it with ghee or oil.
- Place a portion of the dough in the center of the waffle maker and close the lid. Cook until the Koki waffle is golden brown and crispy.
- Repeat with the remaining portions of dough.
- Serve the Sindhi Style (Koki Waffles) hot with yogurt, pickle, or chutney.
