Sindhi Style (koki Waffles)

Ingredients

  • 2 cups whole wheat flour
  • 1 onion, finely chopped
  • 2-3 green chilies, finely chopped
  • 1/2 cup fresh coriander, chopped
  • 1/2 tsp cumin seeds
  • 1/2 tsp ajwain (carom seeds)
  • 1/2 tsp red chili powder
  • 1/4 tsp turmeric powder
  • Salt to taste
  • 2-3 tbsp ghee or oil
  • Water, as needed

Instructions

  1. In a large mixing bowl, combine the whole wheat flour, chopped onion, green chilies, fresh coriander, cumin seeds, ajwain, red chili powder, turmeric powder, and salt.
  2. Heat the ghee in a small pan and pour it over the flour mixture. Mix well.
  3. Add water gradually and knead the mixture into a firm dough.
  4. Divide the dough into 4 equal portions and shape each portion into a ball.
  5. Preheat the waffle maker and lightly grease it with ghee or oil.
  6. Place a portion of the dough in the center of the waffle maker and close the lid. Cook until the Koki waffle is golden brown and crispy.
  7. Repeat with the remaining portions of dough.
  8. Serve the Sindhi Style (Koki Waffles) hot with yogurt, pickle, or chutney.
