Singapore Noodles
Singapore Noodles is a popular dish in Indian Chinese cuisine, known for its flavorful combination of stir-fried noodles, vegetables, and protein. This recipe is a delicious and easy way to enjoy the flavors of Singapore at home.
Ingredients
- 8 oz rice vermicelli noodles
- 2 tbsp vegetable oil
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 1 red bell pepper, julienned
- 1 carrot, julienned
- 1 cup cabbage, shredded
- 1/2 cup green beans, cut into 1-inch pieces
- 1/2 cup tofu, diced
- 2 eggs, beaten
- 2 tbsp curry powder
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1/2 tsp sugar
- Salt to taste
- Black pepper to taste
Instructions
- Soak the rice vermicelli noodles in hot water for 5-7 minutes until softened. Drain and set aside.
- Heat 1 tablespoon of vegetable oil in a wok or large skillet over high heat. Add the beaten eggs and scramble until cooked. Remove from the wok and set aside.
- Heat the remaining 1 tablespoon of oil in the same wok. Add the garlic and onion, and stir-fry for 1-2 minutes until fragrant.
- Add the tofu, bell pepper, carrot, cabbage, and green beans. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- Push the vegetables to the side of the wok and add the softened noodles to the center. Sprinkle the curry powder over the noodles and toss to combine with the vegetables.
- Add the soy sauce, rice vinegar, and sugar to the noodles. Toss everything together until well combined.
- Return the scrambled eggs to the wok and toss to distribute throughout the noodles and vegetables.
- Season with salt and black pepper to taste. Stir-fry for another 2-3 minutes until everything is heated through.
- Remove from heat and serve the Singapore Noodles hot.
