Sinigang Meatball Soup

Ingredients

  • 1 lb ground pork
  • 1 onion, chopped
  • 2 tomatoes, quartered
  • 8 cups water
  • 1 packet sinigang mix
  • 2 cups spinach
  • 1 radish, sliced
  • 1 eggplant, sliced
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix the ground pork with salt and pepper. Form into small meatballs.
  2. In a pot, sauté the onions and tomatoes until fragrant.
  3. Pour in the water and bring to a boil. Add the sinigang mix and stir until dissolved.
  4. Add the meatballs, radish, and eggplant. Simmer for 15 minutes or until the vegetables are tender.
  5. Add the spinach and cook for another 2 minutes.
  6. Season with salt and pepper to taste.
