Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/4 cup water
  • 2 cups ricotta cheese
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the flour, cold butter, sugar, and salt. Use your fingers to rub the butter into the flour until the mixture resembles coarse crumbs.
  3. Gradually add the water and mix until the dough comes together. Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for 30 minutes.
  4. In another bowl, mix the ricotta cheese, sugar, eggs, vanilla extract, and lemon zest until smooth.
  5. Roll out the chilled dough on a floured surface and cut it into circles to line a muffin tin.
  6. Pour the cheese filling into the pastry-lined muffin tin.
  7. Bake for 25 minutes or until the tarts are set and the crust is golden brown.
  8. Allow the tarts to cool before serving.
