Ingredients
- 2 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1/4 cup water
- 2 cups ricotta cheese
- 1 cup granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- Zest of 1 lemon
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the flour, cold butter, sugar, and salt. Use your fingers to rub the butter into the flour until the mixture resembles coarse crumbs.
- Gradually add the water and mix until the dough comes together. Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for 30 minutes.
- In another bowl, mix the ricotta cheese, sugar, eggs, vanilla extract, and lemon zest until smooth.
- Roll out the chilled dough on a floured surface and cut it into circles to line a muffin tin.
- Pour the cheese filling into the pastry-lined muffin tin.
- Bake for 25 minutes or until the tarts are set and the crust is golden brown.
- Allow the tarts to cool before serving.
