Ingredients

  • 1 lb pig's face and ears, chopped
  • 1/4 cup calamansi juice
  • 1/2 cup onion, minced
  • 2-3 pieces red chili peppers, minced
  • 1/4 cup vinegar
  • 3 cloves garlic, minced
  • 1 teaspoon soy sauce
  • Salt and pepper to taste

Instructions

  1. In a pot, boil the chopped pig's face and ears until tender. Drain and let it cool.
  2. Grill the boiled pig's face and ears until crispy. Chop into small pieces.
  3. In a bowl, mix calamansi juice, vinegar, soy sauce, minced onion, garlic, and chili peppers. Add the chopped pig's face and ears. Season with salt and pepper.
  4. Heat a pan and cook the sisig mixture until sizzling and aromatic.
  5. Transfer to a sizzling plate and serve hot.
