Ingredients
- 1 lb fresh green beans, ends trimmed
- 2 tbsp vegetable oil
- 3 cloves garlic, minced
- 2 tsp Sichuan peppercorns
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp sugar
- 1 red chili, sliced (optional for extra heat)
- Salt to taste
Instructions
- Blanch the green beans in boiling water for 2 minutes, then transfer to an ice bath to stop the cooking process. Drain and pat dry.
- Heat the vegetable oil in a wok or large skillet over high heat. Add the green beans and stir-fry for 5-6 minutes until they start to blister and char.
- Push the green beans to the side of the wok, then add the garlic and Sichuan peppercorns. Stir-fry for 30 seconds until fragrant.
- Combine the green beans with the garlic and Sichuan peppercorns. Add the soy sauce, rice vinegar, sugar, and red chili (if using). Stir-fry for another 1-2 minutes.
- Season with salt to taste and transfer to a serving dish.
