Ingredients

  • 2 tsp Sichuan peppercorns
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sugar
  • 1 red chili, sliced (optional for extra heat)
  • Salt to taste

Instructions

  1. Blanch the green beans in boiling water for 2 minutes, then transfer to an ice bath to stop the cooking process. Drain and pat dry.
  2. Heat the vegetable oil in a wok or large skillet over high heat. Add the green beans and stir-fry for 5-6 minutes until they start to blister and char.
  3. Push the green beans to the side of the wok, then add the garlic and Sichuan peppercorns. Stir-fry for 30 seconds until fragrant.
  4. Combine the green beans with the garlic and Sichuan peppercorns. Add the soy sauce, rice vinegar, sugar, and red chili (if using). Stir-fry for another 1-2 minutes.
  5. Season with salt to taste and transfer to a serving dish.
