Ingredients
- 500g fresh fish fillets
- 2 onions, chopped
- 3 garlic cloves, minced
- 2 tomatoes, diced
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 1 cup fish stock
- 1/2 cup white wine
- 2 tbsp olive oil
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the onions and garlic, and sauté until softened.
- Stir in the tomatoes, bell pepper, and zucchini, and cook for 5 minutes.
- Pour in the fish stock and white wine, then add the fish fillets and paprika.
- Season with salt and pepper, then cover and simmer for 45 minutes.
