Ingredients

  • 1 lb (450g) beef or pork, cut into 1-inch cubes
  • 1 large onion, cut into chunks
  • 1 bell pepper, cut into chunks
  • 8-10 cherry tomatoes
  • 1/4 cup (60ml) olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons red wine vinegar
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. In a bowl, whisk together the olive oil, garlic, red wine vinegar, paprika, salt, and pepper to create the marinade.
  2. Place the meat, onion, bell pepper, and cherry tomatoes in a large resealable plastic bag or a shallow dish. Pour the marinade over the meat and vegetables, ensuring they are well coated. Marinate in the refrigerator for at least 2 hours, or overnight for best results.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated meat and vegetables onto skewers, alternating between the different ingredients.
  5. Grill the skewers for about 10-15 minutes, turning occasionally, until the meat is cooked to your desired level of doneness and the vegetables are tender and slightly charred.
  6. Remove the skewers from the grill and let them rest for a few minutes before serving.
