Скопска пилешка супа (Skopje Style Chicken Soup) is a traditional Macedonian dish that is both hearty and comforting. This soup is perfect for a cold winter day or whenever you need a warm and delicious meal.
Ingredients
- 1 whole chicken, cut into pieces
- 2 onions, chopped
- 3 carrots, sliced
- 3 celery stalks, chopped
- 1 red bell pepper, diced
- 2 tomatoes, chopped
- 1 potato, diced
- 1/2 cup rice
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Instructions
- In a large pot, combine the chicken pieces, onions, carrots, celery, and red bell pepper. Add enough water to cover the ingredients and bring to a boil.
- Reduce the heat to low and simmer for 30 minutes, skimming off any foam that rises to the surface.
- Add the tomatoes, potato, and rice to the pot. Continue to simmer for another 20 minutes, or until the chicken is cooked through and the vegetables are tender.
- Stir in the fresh parsley and season with salt and pepper to taste.
- Remove the chicken pieces from the soup and shred the meat. Return the shredded chicken to the pot and discard the bones.
- Serve the Skopje Style Chicken Soup hot, garnished with additional parsley if desired.
