Skopje Style Chicken Soup (Скопска пилешка супа)

Ingredients

  • 1 whole chicken, cut into pieces
  • 2 onions, chopped
  • 3 carrots, sliced
  • 3 celery stalks, chopped
  • 1 red bell pepper, diced
  • 2 tomatoes, chopped
  • 1 potato, diced
  • 1/2 cup rice
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, combine the chicken pieces, onions, carrots, celery, and red bell pepper. Add enough water to cover the ingredients and bring to a boil.
  2. Reduce the heat to low and simmer for 30 minutes, skimming off any foam that rises to the surface.
  3. Add the tomatoes, potato, and rice to the pot. Continue to simmer for another 20 minutes, or until the chicken is cooked through and the vegetables are tender.
  4. Stir in the fresh parsley and season with salt and pepper to taste.
  5. Remove the chicken pieces from the soup and shred the meat. Return the shredded chicken to the pot and discard the bones.
  6. Serve the Skopje Style Chicken Soup hot, garnished with additional parsley if desired.
