Skopje Style Stuffed Mushrooms (Скопски полнети габи)

Ingredients

  • 12 large mushrooms, stems removed and reserved
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Chop the mushroom stems and set aside.
  3. Heat the olive oil in a skillet over medium heat. Add the chopped onion and garlic, and cook until softened.
  4. Add the chopped mushroom stems to the skillet and cook for an additional 3-4 minutes.
  5. Remove the skillet from the heat and stir in the breadcrumbs, Parmesan cheese, and parsley. Season with salt and pepper.
  6. Stuff the mushroom caps with the breadcrumb mixture and place them on a baking sheet.
  7. Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the filling is golden brown.
  8. Serve the stuffed mushrooms hot and enjoy!
