Ingredients

  • 4 medium zucchinis
  • 1 lb ground beef
  • 1 onion, finely chopped
  • 1/2 cup rice
  • 1 can (14 oz) diced tomatoes
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
  • 2 cups beef or vegetable broth
  • Chopped fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the seeds to create a hollow center.
  3. In a bowl, mix the ground beef, onion, rice, diced tomatoes, garlic, paprika, oregano, salt, and pepper.
  4. Stuff the hollowed-out zucchinis with the meat and rice mixture.
  5. Place the stuffed zucchinis in a deep skillet or a baking dish.
  6. Pour the broth over the zucchinis, cover the skillet or dish with a lid or foil, and cook on the stovetop over medium heat for 30-40 minutes, or until the zucchinis are tender and the filling is cooked through.
  7. Garnish with chopped parsley before serving.
