Ingredients
- 4 medium zucchinis
- 1 lb ground beef
- 1 onion, finely chopped
- 1/2 cup rice
- 1 can (14 oz) diced tomatoes
- 2 cloves garlic, minced
- 1 tsp paprika
- 1/2 tsp dried oregano
- Salt and pepper to taste
- 2 cups beef or vegetable broth
- Chopped fresh parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the zucchinis in half lengthwise and scoop out the seeds to create a hollow center.
- In a bowl, mix the ground beef, onion, rice, diced tomatoes, garlic, paprika, oregano, salt, and pepper.
- Stuff the hollowed-out zucchinis with the meat and rice mixture.
- Place the stuffed zucchinis in a deep skillet or a baking dish.
- Pour the broth over the zucchinis, cover the skillet or dish with a lid or foil, and cook on the stovetop over medium heat for 30-40 minutes, or until the zucchinis are tender and the filling is cooked through.
- Garnish with chopped parsley before serving.
