Skyr berja terta, or Skyr Berry Tart, is a traditional Icelandic dessert that combines the creamy texture of skyr with the sweet and tangy flavors of berries. This delightful tart is perfect for a light and refreshing treat.
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1 cup skyr
- 1/4 cup honey
- 2 eggs
- 1 teaspoon vanilla extract
- 2 cups mixed berries (such as strawberries, blueberries, and raspberries)
Instructions
- Preheat the oven to 350°F (175°C).
- In a food processor, pulse together the flour, butter, sugar, and salt until the mixture resembles coarse crumbs.
- Press the mixture into the bottom and up the sides of a 9-inch tart pan. Bake for 15 minutes, then remove from the oven and let it cool slightly.
- In a bowl, whisk together the skyr, honey, eggs, and vanilla extract until smooth. Pour the mixture into the cooled tart crust.
- Arrange the mixed berries on top of the skyr filling.
- Bake the tart for 25-30 minutes, or until the filling is set and the crust is golden brown. Let it cool before serving.
