Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 cup skyr
  • 1/4 cup honey
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups mixed berries (such as strawberries, blueberries, and raspberries)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a food processor, pulse together the flour, butter, sugar, and salt until the mixture resembles coarse crumbs.
  3. Press the mixture into the bottom and up the sides of a 9-inch tart pan. Bake for 15 minutes, then remove from the oven and let it cool slightly.
  4. In a bowl, whisk together the skyr, honey, eggs, and vanilla extract until smooth. Pour the mixture into the cooled tart crust.
  5. Arrange the mixed berries on top of the skyr filling.
  6. Bake the tart for 25-30 minutes, or until the filling is set and the crust is golden brown. Let it cool before serving.
