Slavonski kulen is a traditional Croatian dry sausage, originating from the Slavonia region. It is known for its rich flavor and spicy kick, making it a popular choice for charcuterie boards and appetizers.
Ingredients
- 2 lbs pork shoulder, coarsely ground
- 1/4 cup paprika
- 2 tbsp garlic, minced
- 1 tbsp salt
- 1 tsp black pepper
- 1 tsp cayenne pepper
- 1/4 cup red wine
- 1/4 cup pork fat, diced
- 1 tsp sugar
- 1 tsp allspice
- 1 tsp ground coriander
- 1 tsp ground nutmeg
- 1 tsp dried marjoram
Instructions
- In a large bowl, combine the ground pork shoulder, paprika, garlic, salt, black pepper, cayenne pepper, red wine, pork fat, sugar, allspice, coriander, nutmeg, and marjoram. Mix well to combine all the ingredients.
- Stuff the mixture into natural casings, forming a long sausage shape. Tie the ends with kitchen twine.
- Hang the sausages in a cool, dry place for 3-4 weeks to dry and develop flavor.
- Once dried, Slavonski kulen is ready to be sliced and served.
