Slovak Goulash (Slovenský guláš)

Ingredients

  • 2 lbs beef chuck, cut into cubes
  • 2 onions, chopped
  • 3 garlic cloves, minced
  • 2 red bell peppers, diced
  • 2 tbsp sweet paprika
  • 1 tsp caraway seeds
  • 3 cups beef broth
  • 2 tbsp tomato paste
  • Salt and pepper to taste
  • 2 tbsp vegetable oil

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the onions and cook until softened, about 5 minutes.
  3. Add the beef cubes and brown on all sides, about 8 minutes.
  4. Stir in the garlic, sweet paprika, and caraway seeds, and cook for 1 minute.
  5. Add the diced bell peppers, beef broth, and tomato paste. Season with salt and pepper.
  6. Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 1.5 to 2 hours, or until the beef is tender.
  7. Adjust the seasoning if needed and serve hot.
