Slovak Halušky with Cabbage (Halušky s kapustou)
Halušky s kapustou, or Slovak Halušky with Cabbage, is a traditional Central European dish that combines soft potato dumplings with sautéed cabbage and crispy bacon. This hearty and comforting meal is perfect for a cozy family dinner or a gathering with friends.
Ingredients
- 4 cups all-purpose flour
- 4 large potatoes, peeled and grated
- 1 egg
- 1/2 cup milk
- Salt to taste
- 1 head of cabbage, thinly sliced
- 6 slices of bacon, chopped
- 1 large onion, finely chopped
- 2 tablespoons butter
- Freshly ground black pepper to taste
Instructions
- In a large bowl, mix the grated potatoes, flour, egg, milk, and salt to form a dough.
- Bring a large pot of salted water to a boil.
- Using a spaetzle maker or a colander with large holes, press the dough through the holes directly into the boiling water to form small dumplings. Cook for 3-4 minutes or until the halušky float to the surface, then remove them with a slotted spoon and set aside.
- In a large skillet, cook the chopped bacon until crispy. Remove the bacon from the skillet and set aside, leaving the bacon fat in the pan.
- Add the butter to the skillet with the bacon fat and sauté the chopped onion until translucent.
- Add the thinly sliced cabbage to the skillet and cook until it is tender and slightly caramelized.
- Return the cooked halušky and crispy bacon to the skillet with the cabbage. Season with salt and freshly ground black pepper, and toss everything together until well combined.
- Serve the halušky s kapustou hot, garnished with a dollop of sour cream if desired.
