Slovak-style Beef Roulades (Slovenské hovädzie závitky)

Ingredients

  • 4 thin slices of beef (about 1/4 inch thick)
  • 4 slices of bacon
  • 1 large onion, finely chopped
  • 4 dill pickles, sliced into thin strips
  • 2 tablespoons mustard
  • Salt and pepper to taste
  • 1/4 cup all-purpose flour
  • 2 tablespoons vegetable oil
  • 2 cups beef broth

Instructions

  1. Place a slice of beef on a clean work surface and season with salt and pepper.
  2. Place a slice of bacon, some chopped onion, and a few pickle strips on top of the beef.
  3. Roll up the beef, tucking in the sides to enclose the filling, and secure with toothpicks.
  4. Spread mustard over the outside of each beef roll and coat with flour.
  5. Heat oil in a large skillet over medium-high heat and brown the beef rolls on all sides.
  6. Pour in the beef broth, reduce heat to low, cover, and simmer for 1 hour, or until the beef is tender.
  7. Remove the toothpicks before serving.
