Slovenské hovädzie závitky, or Slovak-style Beef Roulades, are a traditional Slovak dish that features tender beef rolls filled with a savory mixture of bacon, onions, and pickles. This hearty and flavorful dish is perfect for a cozy family dinner or a special occasion.
Ingredients
- 4 thin slices of beef (about 1/4 inch thick)
- 4 slices of bacon
- 1 large onion, finely chopped
- 4 dill pickles, sliced into thin strips
- 2 tablespoons mustard
- Salt and pepper to taste
- 1/4 cup all-purpose flour
- 2 tablespoons vegetable oil
- 2 cups beef broth
Instructions
- Place a slice of beef on a clean work surface and season with salt and pepper.
- Place a slice of bacon, some chopped onion, and a few pickle strips on top of the beef.
- Roll up the beef, tucking in the sides to enclose the filling, and secure with toothpicks.
- Spread mustard over the outside of each beef roll and coat with flour.
- Heat oil in a large skillet over medium-high heat and brown the beef rolls on all sides.
- Pour in the beef broth, reduce heat to low, cover, and simmer for 1 hour, or until the beef is tender.
- Remove the toothpicks before serving.
