Slovak-style Beef Stew (Slovenský hovädzí guláš)

Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 onions, chopped
  • 3 garlic cloves, minced
  • 2 tbsp sweet paprika
  • 1 tsp caraway seeds
  • 2 bay leaves
  • 3 cups beef broth
  • 2 large potatoes, peeled and diced
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the beef cubes in batches over medium-high heat. Remove and set aside.
  2. Add the chopped onions to the pot and cook until softened. Add the minced garlic, sweet paprika, and caraway seeds, and cook for another minute.
  3. Return the beef to the pot and add the bay leaves and beef broth. Bring to a boil, then reduce the heat to low and simmer for 1.5 hours, or until the beef is tender.
  4. Add the diced potatoes to the pot and continue to simmer for another 30 minutes, or until the potatoes are cooked through.
  5. Season with salt and pepper to taste. Serve the guláš hot, garnished with fresh parsley if desired.
