Slovak-style Chicken Schnitzel (Slovenský kurací šnicle)

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 eggs
  • 1 1/2 cups breadcrumbs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • Vegetable oil for frying

Instructions

  1. Place the chicken breasts between two sheets of plastic wrap and gently pound them to an even thickness.
  2. In three separate shallow dishes, place the flour in one, beaten eggs in another, and breadcrumbs seasoned with salt, pepper, and paprika in the third.
  3. Dredge each chicken breast in the flour, then dip into the beaten eggs, and coat with the seasoned breadcrumbs.
  4. Heat vegetable oil in a large skillet over medium-high heat. Fry the breaded chicken breasts for about 4-5 minutes on each side, until golden brown and cooked through.
  5. Remove the schnitzels from the skillet and place them on a paper towel-lined plate to drain any excess oil.
