Slovak-style Sauerkraut Soup (Slovenská kapustová polievka)
Slovenská kapustová polievka, or Slovak-style Sauerkraut Soup, is a traditional dish from Slovak cuisine that is hearty, flavorful, and perfect for cold winter days.
Ingredients
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1/4 cup bacon, diced
- 4 cups sauerkraut, drained and rinsed
- 6 cups chicken or vegetable broth
- 2 large potatoes, peeled and diced
- 1 teaspoon caraway seeds
- Salt and pepper to taste
- 1/2 cup sour cream (optional, for serving)
Instructions
- In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the bacon fat in the pot.
- Add the chopped onion to the pot and cook until translucent, then add the minced garlic and cook for another minute.
- Stir in the sauerkraut, caraway seeds, and diced potatoes. Pour in the chicken or vegetable broth and bring the soup to a boil.
- Reduce the heat and simmer for 45 minutes, or until the potatoes are tender.
- Season the soup with salt and pepper to taste. Serve hot, garnished with crispy bacon and a dollop of sour cream if desired.
