Slovak-style Stuffed Peppers (Slovenské plnené papriky)
Slovenské plnené papriky, or Slovak-style Stuffed Peppers, are a traditional Slovak dish that is hearty, flavorful, and perfect for a comforting family meal.
Ingredients
- 4 large bell peppers
- 1 cup cooked rice
- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 tsp paprika
- Salt and pepper to taste
- 1/2 cup beef or vegetable broth
- 2 tbsp olive oil
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and cook until softened.
- Add the ground beef to the skillet and cook until browned. Season with paprika, salt, and pepper.
- Stir in the cooked rice and diced tomatoes. Cook for 5 minutes, then remove from heat.
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- Stuff the peppers with the meat and rice mixture, and place them in a deep pot or Dutch oven.
- Pour the beef or vegetable broth into the pot around the peppers.
- Cover the pot and cook the peppers on the stovetop over low heat for 45-50 minutes, or until the peppers are tender.
- Serve the stuffed peppers hot, with a side of sour cream or yogurt if desired.
