Slovak-style Stuffed Peppers (Slovenské plnené papriky)

Ingredients

  • 4 large bell peppers
  • 1 cup cooked rice
  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1/2 cup beef or vegetable broth
  • 2 tbsp olive oil

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and cook until softened.
  2. Add the ground beef to the skillet and cook until browned. Season with paprika, salt, and pepper.
  3. Stir in the cooked rice and diced tomatoes. Cook for 5 minutes, then remove from heat.
  4. Preheat the oven to 375°F (190°C).
  5. Cut the tops off the bell peppers and remove the seeds and membranes.
  6. Stuff the peppers with the meat and rice mixture, and place them in a deep pot or Dutch oven.
  7. Pour the beef or vegetable broth into the pot around the peppers.
  8. Cover the pot and cook the peppers on the stovetop over low heat for 45-50 minutes, or until the peppers are tender.
  9. Serve the stuffed peppers hot, with a side of sour cream or yogurt if desired.
