Slovenian Spinach Pie (Špinačna Pita)

Ingredients

  • 1 pound fresh spinach, chopped
  • 1 onion, finely chopped
  • 3 eggs
  • 1 cup feta cheese, crumbled
  • 1/2 cup ricotta cheese
  • 1/4 cup fresh dill, chopped
  • 1/4 teaspoon nutmeg
  • Salt and pepper to taste
  • 10 sheets phyllo pastry
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the chopped spinach, onion, eggs, feta cheese, ricotta cheese, dill, nutmeg, salt, and pepper.
  3. Layer 5 sheets of phyllo pastry in a greased 9x13 inch baking dish, brushing each sheet with melted butter.
  4. Spread the spinach mixture over the phyllo pastry.
  5. Layer the remaining 5 sheets of phyllo pastry on top of the spinach mixture, brushing each sheet with melted butter.
  6. Score the top of the pie into squares or triangles using a sharp knife.
  7. Bake in the preheated oven for 40 minutes, or until the phyllo pastry is golden brown and crispy.
  8. Allow the pie to cool for a few minutes before serving.
