- Salt and pepper to taste
Instructions
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat the olive oil over medium heat. Add the onions and garlic, and sauté until softened.
- Add the mushrooms to the skillet and cook until they release their liquid and become golden brown.
- Grease a baking dish and layer half of the sliced potatoes on the bottom.
- Spread the cooked mushrooms and onion mixture over the potatoes.
- Layer the remaining sliced potatoes on top of the mushrooms.
- In a bowl, mix the vegetable broth and heavy cream. Pour this mixture over the layered potatoes and mushrooms.
- Sprinkle the grated cheese on top and cover the baking dish with foil.
- Bake in the preheated oven for 45 minutes. Then remove the foil and bake for an additional 15 minutes, or until the top is golden and bubbly.
- Let the casserole rest for a few minutes before serving.
