Ingredients

  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat the olive oil over medium heat. Add the onions and garlic, and sauté until softened.
  3. Add the mushrooms to the skillet and cook until they release their liquid and become golden brown.
  4. Grease a baking dish and layer half of the sliced potatoes on the bottom.
  5. Spread the cooked mushrooms and onion mixture over the potatoes.
  6. Layer the remaining sliced potatoes on top of the mushrooms.
  7. In a bowl, mix the vegetable broth and heavy cream. Pour this mixture over the layered potatoes and mushrooms.
  8. Sprinkle the grated cheese on top and cover the baking dish with foil.
  9. Bake in the preheated oven for 45 minutes. Then remove the foil and bake for an additional 15 minutes, or until the top is golden and bubbly.
  10. Let the casserole rest for a few minutes before serving.
