Slow Cooker Pot Roast

Ingredients
- 3 lb chuck roast
- 1 onion, chopped
- 4 carrots, peeled and cut into chunks
- 4 potatoes, peeled and cut into chunks
- 2 cups beef broth
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Season the chuck roast with salt, pepper, and dried thyme.
- Place the chopped onion, carrots, and potatoes in the bottom of the slow cooker.
- Place the seasoned chuck roast on top of the vegetables.
- Pour the beef broth over the roast and vegetables.
- Cover and cook on low for 8 hours, or until the meat is tender.
- Once cooked, remove the roast and vegetables from the slow cooker and let the roast rest for a few minutes before slicing.
- Serve the sliced pot roast with the cooked vegetables and some of the cooking liquid as gravy.
