Ingredients

  • 3 lb chuck roast
  • 1 onion, chopped
  • 4 carrots, peeled and cut into chunks
  • 4 potatoes, peeled and cut into chunks
  • 2 cups beef broth
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Season the chuck roast with salt, pepper, and dried thyme.
  2. Place the chopped onion, carrots, and potatoes in the bottom of the slow cooker.
  3. Place the seasoned chuck roast on top of the vegetables.
  4. Pour the beef broth over the roast and vegetables.
  5. Cover and cook on low for 8 hours, or until the meat is tender.
  6. Once cooked, remove the roast and vegetables from the slow cooker and let the roast rest for a few minutes before slicing.
  7. Serve the sliced pot roast with the cooked vegetables and some of the cooking liquid as gravy.
