Smashed Fried Chicken (ayam Penyet)

Ingredients

  • 4 chicken thighs
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric powder
  • 1 cup all-purpose flour
  • Oil for frying
  • 4 cups water
  • 4 red chilies
  • 2 cloves garlic
  • 1 teaspoon salt
  • 1 tablespoon lime juice

Instructions

  1. Using a meat mallet, pound the chicken thighs to flatten them.
  2. In a bowl, mix the minced garlic, salt, coriander, cumin, and turmeric. Rub this mixture onto the chicken thighs and let them marinate for 15 minutes.
  3. Heat oil in a pan and fry the chicken thighs until golden and crispy. Drain on paper towels.
  4. In a separate pot, boil the water and blanch the red chilies for 1 minute. Drain and transfer to a mortar and pestle. Add garlic and salt, then pound into a paste. Stir in lime juice.
  5. Serve the smashed fried chicken with the spicy sambal on the side.
