Ingredients

  • 1 bay leaf

  • 1 cup of flour
  • 2 eggs
  • 1/4 cup of water
  • Salt and pepper to taste

Instructions

  1. Place the smoked collar of pork, onion, carrots, garlic, beef or vegetable broth, bay leaf, thyme, and black peppercorns in a large pot. Bring to a boil, then reduce the heat and simmer for 1.5 to 2 hours, or until the pork is tender.
  2. While the pork is cooking, prepare the dumplings. In a bowl, mix the flour, eggs, water, and a pinch of salt until a smooth dough forms.
  3. Bring a large pot of salted water to a boil. Using wet hands, form small dumplings from the dough and drop them into the boiling water. Cook for about 10 minutes, or until the dumplings float to the surface.
