Ingredients
- 1 smoked collar of pork, about 2 lbs
- 1 onion, chopped
- 2 carrots, chopped
- 2 cloves of garlic, minced

- 1 teaspoon of black peppercorns
- 1 cup of flour
- 2 eggs
- 1/4 cup of water
- Salt and pepper to taste
Instructions
- Place the smoked collar of pork, onion, carrots, garlic, beef or vegetable broth, bay leaf, thyme, and black peppercorns in a large pot. Bring to a boil, then reduce the heat and simmer for 1.5 to 2 hours, or until the pork is tender.
- While the pork is cooking, prepare the dumplings. In a bowl, mix the flour, eggs, water, and a pinch of salt until a smooth dough forms.
- Bring a large pot of salted water to a boil. Using wet hands, form small dumplings from the dough and drop them into the boiling water. Cook for about 10 minutes, or until the dumplings float to the surface.
- Once the pork is tender, remove it from the pot and let it rest for a few minutes before slicing.
- Serve the sliced pork with the dumplings and some of the cooking broth. Season with salt and pepper to taste.
