Smoked Eel and Potato Salad (Kūpināta zuvele un kartupeļu salāti)

Ingredients

  • 300g smoked eel, flaked
  • 500g potatoes, boiled and diced
  • 1 red onion, thinly sliced
  • 2 hard-boiled eggs, chopped
  • 3 tbsp mayonnaise
  • 2 tbsp sour cream
  • 1 tbsp Dijon mustard
  • Salt and pepper to taste
  • Fresh dill for garnish

Instructions

  1. In a large bowl, combine the smoked eel, diced potatoes, sliced red onion, and chopped hard-boiled eggs.
  2. In a small bowl, mix together the mayonnaise, sour cream, and Dijon mustard. Season with salt and pepper.
  3. Pour the dressing over the eel and potato mixture and toss gently to coat everything evenly.
  4. Chill the salad in the refrigerator for at least 30 minutes before serving.
  5. Garnish with fresh dill before serving.
