Kūpināta zuvele un kartupeļu salāti, or Smoked Eel and Potato Salad, is a traditional Latvian dish that combines the rich, smoky flavor of eel with the creamy texture of potatoes. This salad is perfect for a light lunch or as a side dish for a summer barbecue.
Ingredients
- 300g smoked eel, flaked
- 500g potatoes, boiled and diced
- 1 red onion, thinly sliced
- 2 hard-boiled eggs, chopped
- 3 tbsp mayonnaise
- 2 tbsp sour cream
- 1 tbsp Dijon mustard
- Salt and pepper to taste
- Fresh dill for garnish
Instructions
- In a large bowl, combine the smoked eel, diced potatoes, sliced red onion, and chopped hard-boiled eggs.
- In a small bowl, mix together the mayonnaise, sour cream, and Dijon mustard. Season with salt and pepper.
- Pour the dressing over the eel and potato mixture and toss gently to coat everything evenly.
- Chill the salad in the refrigerator for at least 30 minutes before serving.
- Garnish with fresh dill before serving.
