Ingredients

  • 500g smoked fish, flaked
  • 2 onions, chopped
  • 3 tomatoes, diced
  • 3 carrots, sliced
  • 2 potatoes, diced
  • 1 green bell pepper, chopped
  • 1 scotch bonnet pepper, chopped
  • 2 cloves garlic, minced
  • 1/4 cup palm oil
  • 1 liter fish or vegetable stock
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the palm oil over medium heat.
  2. Add the onions, garlic, and peppers. Sauté until the onions are translucent.
  3. Add the tomatoes, carrots, and potatoes. Cook for 5 minutes, stirring occasionally.
  4. Pour in the fish or vegetable stock and bring to a boil.
  5. Reduce the heat to low and simmer for 20 minutes.
  6. Add the flaked smoked fish and simmer for an additional 10 minutes.
