Ingredients
- 500g smoked fish, flaked
- 2 onions, chopped
- 3 tomatoes, diced
- 3 carrots, sliced
- 2 potatoes, diced
- 1 green bell pepper, chopped
- 1 scotch bonnet pepper, chopped
- 2 cloves garlic, minced
- 1/4 cup palm oil
- 1 liter fish or vegetable stock
- Salt and pepper to taste
Instructions
- In a large pot, heat the palm oil over medium heat.
- Add the onions, garlic, and peppers. Sauté until the onions are translucent.
- Add the tomatoes, carrots, and potatoes. Cook for 5 minutes, stirring occasionally.
- Pour in the fish or vegetable stock and bring to a boil.
- Reduce the heat to low and simmer for 20 minutes.
- Add the flaked smoked fish and simmer for an additional 10 minutes.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
