Ingredients
- 1 whole fish (such as trout or mackerel), cleaned and gutted
- 1 cup soy sauce
- 1/2 cup rice vinegar
- 1/2 cup brown sugar
- 2 tbsp Shaoxing wine
- 3 cloves garlic, minced
- 1 inch ginger, sliced
- 1 star anise
- 1 cinnamon stick
- 1/2 tsp Sichuan peppercorns
- 2 green onions, chopped
- 1 tbsp vegetable oil
Instructions
- Prepare the fish by making 2-3 diagonal cuts on each side.
- In a small bowl, mix soy sauce, rice vinegar, brown sugar, and Shaoxing wine to make the marinade.
- Heat vegetable oil in a pan over medium heat. Add garlic, ginger, star anise, cinnamon stick, and Sichuan peppercorns. Sauté until fragrant.
- Pour the marinade into the pan and bring to a simmer. Add the fish and spoon the marinade over it. Cover and cook for 30 minutes, turning the fish halfway through.
- Uncover the pan and continue to cook for another 15-20 minutes, allowing the sauce to thicken and glaze the fish.
- Transfer the fish to a serving platter, garnish with chopped green onions, and serve hot.
