Smoked Fish in Sweet Soy Sauce (糖醋熏鱼)

Ingredients

  • 1 whole fish (such as trout or mackerel), cleaned and gutted
  • 1 cup soy sauce
  • 1/2 cup rice vinegar
  • 1/2 cup brown sugar
  • 2 tbsp Shaoxing wine
  • 3 cloves garlic, minced
  • 1 inch ginger, sliced
  • 1 star anise
  • 1 cinnamon stick
  • 1/2 tsp Sichuan peppercorns
  • 2 green onions, chopped
  • 1 tbsp vegetable oil

Instructions

  1. Prepare the fish by making 2-3 diagonal cuts on each side.
  2. In a small bowl, mix soy sauce, rice vinegar, brown sugar, and Shaoxing wine to make the marinade.
  3. Heat vegetable oil in a pan over medium heat. Add garlic, ginger, star anise, cinnamon stick, and Sichuan peppercorns. Sauté until fragrant.
  4. Pour the marinade into the pan and bring to a simmer. Add the fish and spoon the marinade over it. Cover and cook for 30 minutes, turning the fish halfway through.
  5. Uncover the pan and continue to cook for another 15-20 minutes, allowing the sauce to thicken and glaze the fish.
  6. Transfer the fish to a serving platter, garnish with chopped green onions, and serve hot.
