Smoked Haddock and Leek Quiche (Ræst Síld og Løg)
Ræst Síld og Løg, or Smoked Haddock and Leek Quiche, is a traditional dish from Faroese cuisine that combines the smoky flavor of haddock with the subtle sweetness of leeks in a savory quiche. Ingredients
- 300g smoked haddock, flaked
- 1 leek, thinly sliced
- 200g all-purpose flour
- 100g butter, cold and diced
- 3 eggs
- 200ml milk
- 100g grated cheese
- Salt and pepper to taste
Instructions
- Preheat the oven to 180°C (350°F).
- In a bowl, rub the cold diced butter into the flour until it resembles breadcrumbs. Add a little cold water if needed to bring the dough together. Wrap the dough in plastic wrap and chill for 15 minutes.
- Roll out the pastry on a floured surface and use it to line a 9-inch tart tin. Prick the base with a fork and line with parchment paper and baking beans. Blind bake for 15 minutes.
- Meanwhile, sauté the sliced leeks in a pan until softened.
- In a bowl, whisk together the eggs, milk, and grated cheese. Season with salt and pepper.
- Spread the flaked haddock and sautéed leeks over the partially baked pastry base. Pour the egg mixture over the top.
- Bake in the preheated oven for 25-30 minutes, or until the filling is set and golden.
- Allow to cool slightly before serving.
