Smoked Haddock and Leek Quiche (Ræst Síld og Løg)

Ingredients

  • 300g smoked haddock, flaked
  • 1 leek, thinly sliced
  • 200g all-purpose flour
  • 100g butter, cold and diced
  • 3 eggs
  • 200ml milk
  • 100g grated cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, rub the cold diced butter into the flour until it resembles breadcrumbs. Add a little cold water if needed to bring the dough together. Wrap the dough in plastic wrap and chill for 15 minutes.
  3. Roll out the pastry on a floured surface and use it to line a 9-inch tart tin. Prick the base with a fork and line with parchment paper and baking beans. Blind bake for 15 minutes.
  4. Meanwhile, sauté the sliced leeks in a pan until softened.
  5. In a bowl, whisk together the eggs, milk, and grated cheese. Season with salt and pepper.
  6. Spread the flaked haddock and sautéed leeks over the partially baked pastry base. Pour the egg mixture over the top.
  7. Bake in the preheated oven for 25-30 minutes, or until the filling is set and golden.
  8. Allow to cool slightly before serving.
