Smoked Herring and Potato Salad (Ræst Síld og Kartøflusalat)

Ingredients

  • 500g smoked herring fillets
  • 1kg potatoes, peeled and diced
  • 1 red onion, thinly sliced
  • 1/2 cup chopped fresh dill
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 2 tablespoons white wine vinegar
  • Salt and pepper to taste

Instructions

  1. Boil the diced potatoes in salted water until tender, then drain and let cool.
  2. Flake the smoked herring fillets into bite-sized pieces and place in a large mixing bowl.
  3. Add the cooled potatoes, sliced red onion, and chopped dill to the bowl with the herring.
  4. In a separate small bowl, whisk together the sour cream, mayonnaise, and white wine vinegar. Season with salt and pepper to taste.
  5. Pour the dressing over the herring and potato mixture, then gently toss to coat everything evenly.
  6. Refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld together.
