Ræst Síld og Kartøflusalat, or Smoked Herring and Potato Salad, is a traditional dish from the Faroe Islands. This flavorful and hearty salad is perfect for a light lunch or as a side dish for a summer barbecue.
Ingredients
- 500g smoked herring fillets
- 1kg potatoes, peeled and diced
- 1 red onion, thinly sliced
- 1/2 cup chopped fresh dill
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 2 tablespoons white wine vinegar
- Salt and pepper to taste
Instructions
- Boil the diced potatoes in salted water until tender, then drain and let cool.
- Flake the smoked herring fillets into bite-sized pieces and place in a large mixing bowl.
- Add the cooled potatoes, sliced red onion, and chopped dill to the bowl with the herring.
- In a separate small bowl, whisk together the sour cream, mayonnaise, and white wine vinegar. Season with salt and pepper to taste.
- Pour the dressing over the herring and potato mixture, then gently toss to coat everything evenly.
- Refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld together.
