Smoked Hokkaido Venison Sausage With Mustard Sauce

Ingredients

  • 1 lb Hokkaido venison sausage
  • 1/4 cup soy sauce
  • 2 tbsp mirin
  • 1 tbsp sake
  • 1/4 cup Dijon mustard
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp grated ginger
  • 1 clove garlic, minced
  • Sesame seeds for garnish

Instructions

  1. In a small bowl, mix together soy sauce, mirin, and sake. Place the venison sausage in a shallow dish and pour the soy sauce mixture over it. Let it marinate for 15 minutes.
  2. In a separate bowl, whisk together Dijon mustard, honey, rice vinegar, grated ginger, and minced garlic to make the mustard sauce.
  3. Heat a stovetop smoker over medium heat. Once hot, place the marinated venison sausage in the smoker and smoke for 45 minutes, or until fully cooked.
  4. Remove the smoked venison sausage from the smoker and let it rest for 5 minutes before slicing.
