Smoked Hokkaido Venison Skewers With Teriyaki Glaze

Ingredients

  • 1 lb Hokkaido venison, cut into 1-inch cubes
  • 1/2 cup soy sauce
  • 1/4 cup mirin
  • 2 tbsp sake
  • 2 tbsp brown sugar
  • 1 tsp grated ginger
  • 1 tsp grated garlic
  • 1/4 tsp black pepper
  • 8 wooden skewers, soaked in water

Instructions

  1. In a bowl, combine soy sauce, mirin, sake, brown sugar, ginger, garlic, and black pepper to make the teriyaki marinade.
  2. Add the venison cubes to the marinade, cover, and refrigerate for at least 1 hour.
  3. Preheat the grill to medium-high heat.
