Rajasthani Dhungar Maas is a traditional smoked meat curry from the royal state of Rajasthan, India. This rich and flavorful dish is a perfect blend of spices and smoky flavors, making it a favorite among meat lovers.

Smoked Meat Curry (rajasthani Dhungar Maas)

Ingredients

  • 500g boneless mutton
  • 1 cup yogurt
  • 2 onions, finely chopped
  • 3 tomatoes, pureed
  • 2 tbsp ginger-garlic paste
  • 1 tsp turmeric powder
  • 2 tsp red chili powder
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1 tsp garam masala
  • 4-5 green chilies, slit
  • 1/4 cup ghee (clarified butter)
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Marinate the mutton with yogurt, ginger-garlic paste, turmeric powder, red chili powder, coriander powder, cumin powder, garam masala, and salt. Let it sit for 30 minutes.
  2. Heat ghee in a heavy-bottomed pan and sauté the chopped onions until golden brown.
  3. Add the marinated mutton and cook on medium heat until the meat is tender.
  4. Pour in the tomato puree and cook for another 10 minutes.
  5. For the smoking effect, heat a piece of charcoal until red hot. Place it in a small bowl in the center of the mutton curry. Drizzle a little ghee over the charcoal and immediately cover the pan with a tight-fitting lid. Let it smoke for 5-7 minutes.
  6. Remove the charcoal and discard. Garnish the curry with slit green chilies and fresh coriander leaves.
