Smoked Meat Curry (rajasthani Dhungar Maas)
Rajasthani Dhungar Maas is a traditional smoked meat curry from the royal state of Rajasthan, India. This rich and flavorful dish is a perfect blend of spices and smoky flavors, making it a favorite among meat lovers.
Ingredients
- 500g boneless mutton
- 1 cup yogurt
- 2 onions, finely chopped
- 3 tomatoes, pureed
- 2 tbsp ginger-garlic paste
- 1 tsp turmeric powder
- 2 tsp red chili powder
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1 tsp garam masala
- 4-5 green chilies, slit
- 1/4 cup ghee (clarified butter)
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Marinate the mutton with yogurt, ginger-garlic paste, turmeric powder, red chili powder, coriander powder, cumin powder, garam masala, and salt. Let it sit for 30 minutes.
- Heat ghee in a heavy-bottomed pan and sauté the chopped onions until golden brown.
- Add the marinated mutton and cook on medium heat until the meat is tender.
- Pour in the tomato puree and cook for another 10 minutes.
- For the smoking effect, heat a piece of charcoal until red hot. Place it in a small bowl in the center of the mutton curry. Drizzle a little ghee over the charcoal and immediately cover the pan with a tight-fitting lid. Let it smoke for 5-7 minutes.
- Remove the charcoal and discard. Garnish the curry with slit green chilies and fresh coriander leaves.
