Ingredients

  • 1 kg smoked pork belly
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 cup beef broth
  • 2 tbsp juniper berries
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large pot, sear the smoked pork belly on all sides until browned. Remove and set aside.
  2. Sauté the chopped onion and minced garlic until fragrant.
  3. Add the beef broth and juniper berries to the pot. Return the pork belly to the pot and simmer for 1.5 hours, or until the meat is tender.
  4. Remove the pork belly from the pot and let it rest. Strain the sauce and return it to the pot.
  5. Stir in the heavy cream and simmer until the sauce thickens. Season with salt and pepper.
  6. Slice the pork belly and serve with the juniper berry sauce.
