This Suitsetatud lõhe ja tillitart (Smoked Salmon and Dill Tart) is a classic Estonian dish that combines the rich flavors of smoked salmon with the freshness of dill in a delightful tart.
Ingredients
- 200g smoked salmon, chopped
- 1/2 cup fresh dill, chopped
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup cold water
- 3 eggs
- 1 cup heavy cream
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a food processor, pulse the flour and butter until it resembles coarse crumbs. Add cold water and pulse until the dough comes together.
- Press the dough into a tart pan and prick the bottom with a fork. Blind bake for 15 minutes.
- Whisk together eggs, heavy cream, salt, and pepper. Stir in the chopped smoked salmon and dill.
- Pour the mixture into the pre-baked tart shell and bake for an additional 25 minutes, or until the filling is set.
- Let the tart cool slightly before serving.
