Ingredients

  • 2 large eggplants
  • 2 tomatoes, finely chopped
  • 1 onion, finely chopped
  • 2 green chilies, finely chopped
  • 1 teaspoon ginger, grated
  • 1 teaspoon garlic, minced
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 2 tablespoons fresh cilantro, chopped
  • Salt to taste
  • 2 tablespoons oil

Instructions

  1. Preheat the stovetop flame and roast the eggplants until the skin is charred and the flesh is soft. Let them cool, then peel off the skin and mash the flesh.
  2. Heat oil in a pan and add cumin seeds. Once they splutter, add onions and sauté until golden brown.
  3. Add green chilies, ginger, and garlic. Sauté for a few minutes, then add tomatoes and cook until they turn mushy.
  4. Stir in the mashed eggplant, turmeric, coriander powder, red chili powder, and salt. Cook for 10-15 minutes, stirring occasionally.
  5. Garnish with fresh cilantro and serve hot with roti or naan.
