Ingredients
- 2 large eggplants
- 2 tomatoes, finely chopped
- 1 onion, finely chopped
- 2 green chilies, finely chopped
- 1 teaspoon ginger, grated
- 1 teaspoon garlic, minced
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 2 tablespoons fresh cilantro, chopped
- Salt to taste
- 2 tablespoons oil
Instructions
- Preheat the stovetop flame and roast the eggplants until the skin is charred and the flesh is soft. Let them cool, then peel off the skin and mash the flesh.
- Heat oil in a pan and add cumin seeds. Once they splutter, add onions and sauté until golden brown.
- Add green chilies, ginger, and garlic. Sauté for a few minutes, then add tomatoes and cook until they turn mushy.
- Stir in the mashed eggplant, turmeric, coriander powder, red chili powder, and salt. Cook for 10-15 minutes, stirring occasionally.
- Garnish with fresh cilantro and serve hot with roti or naan.
