Ingredients

  • 2 large eggplants
  • 2 tomatoes, finely chopped
  • 1 onion, finely chopped
  • 2 green chilies, finely chopped
  • 1 teaspoon ginger, grated
  • 1 teaspoon garlic, minced
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 2 tablespoons vegetable oil
  • Fresh cilantro for garnish
  • Salt to taste

Instructions

  1. Preheat the stovetop flame and place the eggplants directly on the flame. Roast them, turning occasionally, until the skin is charred and the flesh is soft.
  2. Once roasted, remove the eggplants from the flame and let them cool. Peel off the charred skin and mash the flesh in a bowl.
  3. Heat vegetable oil in a pan and add cumin seeds. Once they splutter, add chopped onions, green chilies, ginger, and garlic. Sauté until the onions are translucent.
  4. Add chopped tomatoes, turmeric powder, coriander powder, and salt. Cook until the tomatoes are soft and the mixture is well combined.
  5. Add the mashed eggplant and garam masala to the pan. Mix well and cook for a few minutes to let the flavors blend.
  6. Garnish with fresh cilantro and serve hot with roti or rice.
