Snail Rolls (schneckenbrötchen)

Ingredients

  • 1 package active dry yeast
  • 1/2 cup warm water
  • 1/2 cup warm milk
  • 1/3 cup granulated sugar
  • 1/3 cup butter, melted
  • 1 teaspoon salt
  • 4 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 2 tablespoons ground cinnamon
  • 1 cup chopped nuts (walnuts or pecans)

Instructions

  1. Dissolve yeast in warm water in a large bowl.
  2. Add warm milk, granulated sugar, melted butter, salt, and 2 cups flour. Beat until smooth.
  3. Stir in enough remaining flour to form a soft dough.
  4. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes.
  5. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour.
  6. Punch dough down. Turn onto a lightly floured surface; roll into a 16x12-in. rectangle.
  7. Spread softened butter over dough to within 1/2 inch of edges.
  8. Combine brown sugar and cinnamon; sprinkle over butter. Sprinkle with nuts.
  9. Roll up jelly-roll style, starting with a long side; pinch seam to seal.
  10. Cut into 12 slices. Place cut side down in a greased 13x9-in. baking pan. Cover and let rise until doubled, about 30 minutes.
  11. Preheat oven to 375°F. Bake until golden brown, 20-25 minutes.
  12. Cool in pan 1 minute before inverting onto a serving platter.
